Mike Ito
Mike Ito has been on the Baldknobbers stage for 32 years. In 1979, when the Baldknobbers were performing a road show in the Dallas/Fort Worth area they saw Mike Ito perform. Soon afterwards they invited him to join the Baldknobbers Show.

Most of us know Mike is from Tokyo, Japan. We all know he is a great showman who plays fiddle, banjo , and mandolin, as well as sings and yodels.

Did you know he is a great cook who enjoys cuisine from around the world? His secret of a great French meal is the sauce. Here is one of his favorite French sauce recipes that can be used with all kinds of meat and seafood, Mike Ito’s Green Peppercorn Sauce. Combine 1 small red onion, ½ cup red wine, ½ teaspoon each of dry tarragon, thyme leaves, and dry basil, 2 tablespoons each of green peppercorns, Dijon mustard, and chopped parsley, and 1-½ cups of beef broth.
